Spinach Leaf Challenge - Middle and High School

The idea of this activity is to have students try to insulate a spinach leaf enough that it can survive freezing temperatures (for a short time) without wilting, mimicking the role of a bud in protecting tiny leaves during winter. It's a race for survival!
